Sheer khurma

SHEER KHURMA.  
                                  Preparation time -15 min.
                                  Cooking time-35 min.
Sheer khurma is a rich mughlai dessert.Sheer khurma is an Eid special sweet.sheer khurma literally means "milk with dates"in Urdu and is a festival vermicelli pudding prepared by Muslims all across the world.

This is my authentic recipe of sheer khurma...

Ingredients:1 kg.full cream milk
7-8 tsp ghee
1/2 bowl sugar (dates and raisins add a lot of sweetness to milk ,so add sugar accordingly)
1/2 cup broken vermicelli
8-10 cashews (soaked in water for 2 hours)
8-10 almonds (soaked in water for 4 hours)
8-10 dry dates (soaked in water for 6 hours)
2-3 green cardamom
2 tsp chironji
2 tsp golden raisins
1 cup makhana
1/2 cup dessicated coconut
2 tsp chopped pistachios

Method:
1.chopped soaked dry dates remove the seeds,peel soaked almonds and cut in to 2 parts.
2.Roast the vermicelli till golden and keep aside.
3.Heat milk in a heavy bottom pan and let it come to a boil .lower the flame and simmer for 8-10 minutes till the milk slightly thick.
4.add chopped dates, raisins and sugar to the milk and simmer  till the dates are cooked and become soft.
5.Now add roasted vermicelli cooked about 8-10 minutes on low flame.
6.milk will also thicken and reduce in volume.
7.add 2 tsp ghee in a pan and roast the makhana and keep aside.
8.now add ghee in a pan add crushed cardamom and chironji ,when chironji change in colour add almonds and cashews.
9.when almonds and cashews change in golden brown colour add dessicated coconut in ghee and roasted in 2-3 minutes.
10.now add whole dryfruits mixture in vermicelli milk and mix well.
11.serve the sheer khurma hot ,warm and chilled.
12.garnish with pistachios.......
